OUR HEALTHY FOOD WE KNOW YOU'LL LOVE!

A serendipitous happening led us to Flesh catering, and simply put we couldn't be more thrilled!   Led by Executive Chef Paula Mantilla and her ultra-creative, positive and high energy team, our Inaugural Fest Retreat is blessed to have her unique, caringly prepared and most of all truly authentic Vegan and Vegetarian meals she'll lovingly prepare side by side her Sous Chef, and be serving to each of you who purchase the fresh and local food tent option on our Register page.

 

Faced with cancer in 1998, Paula began her journey with the holistic healing arts.  Divine Vegan and Raw Chef, she has been creating tribal earth infused cuisine since 2007 and infuses all she does with balanced mind, body and spirit.  Currently Paula is President of Flesh providing catering and leading community workshops, high vibrational organic and local food that heals and tastes amazing is her mission!  She is a Goddess, Mother of four crystal children called to serve in co-creating a sustainable planet and looks forward to FLESH, tribal cuisine restaurant, coming soon (and we do too)!

 

We are excited to see and look forward to warmly welcoming those in our food tent all weekend long, but remember you must purchase the fresh and local food tent option - Purchase tickets here.

MENU

FRIDAY, OCTOBER 6th:

Lunch - 12 noon - 1: 30 pm

 

“Mistic” Jicama Kale Salad

“Detox” Quinoa, Cauliflower Rice Tubbouleh

Garlic Red Pepper Falafel w/ cashew dill sauce

and

 Gluten Free Rolls with Olive Butter

 

Dinner - 4: 30 - 6: 30 pm

 

“Fancy Face” Fajita Nachos with toppings

“Grounded” Vegan Chilli with Corn Bread

“Slurp”  Quinoa Kale Tortilla Soup

and

“Rawk’n Carrot Cake” - Coconut infused sweet velvet raw carrot cake sweetened w/ dates & Vietnamese cinnamon walnut crust

Lunch and dinner beverages include Cold Herbal Teas and Infused Alkaline Water

SATURDAY, OCTOBER 7th:

Breakfast - 8 am - 9: 30 am

 

“Hulk” Green Spinach and vegan protein Superfood Breakfast Bowl

and

“Amethyst” Acai, banana and vegan protein Superfood Breakfast Bowl

 

 Lunch - 11:30 am - 1:30 pm

 

 “Chakras” Spinach Chakra Salad w/ avocado slices

“Rooted” Sprinkled sprouted lentils, drenched in garlic with sprouted brown and wild rice.

and

“Intertwined” Four Noodle Pasta (kelp, zucchini, sunflower sprout and carrot) w/ Garden Fresh Italian Pesto

 

 Dinner - 4:30 pm - 6:30 pm

 

 “Fire” BBQ Mushroom Steak Tacos with toppings

“Savory” Buttnernut Squash Tacos with toppings (Local)

 “Sprouted” Spiced & Sprouted Black Bean Soup

and

“Crow” Raw Cacao Chocolate Mousse

 

Breakfast beverages daily include Organic Coffee, Almond and Coconut Milk Creamer, Hot Herbal Teas and Infused Alkaline Water

SUNDAY, OCTOBER 8th:

Breakfast - 8 am - 9:30 am

 

 “Wally” Walnut Hemp Chia Oatbran with raw honey, apple and kiwi slices

“Chill” Protein Berry Smoothies

 

Lunch - 11:30 am - 1:30 pm

 

 “CareRoll” Carrot, cumber and Avo Spring Rolls with Turkish Tahini dipping Sauce

“Kap” (Thank you in Thai) Vegan Pad Thai over bed of Spinach

and

“Stuffed” Sweet potatoes packed with local veggies and quinoa with cilantro sauce

 

 Dinner - 4:30 pm - 6:30 pm

 

“Spiraled” Lasagna wrapped in bite size Q’s served with fresh local basil marinara

“Foraged” Locally Foraged Mushroom Pizza drizzled with red pepper oil

“Goddess” Gorgeously organic Greek Salad topped with sunflower seeds and vegan cheese

and

“ChestnutSu” Tiramisu infused with foraged chestnuts and spices
